Ingredients

  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can pinto beans (15 1/2 ounces) drained and rinsed
  • 1/3 cup vegetable broth
  • Salt and black pepper to taste
  • 1 dash hot sauce
  • Fresh chopped cilantro for garnish

Instructions

  1. Heat the olive oil in a saucepan over medium heat. Add the onion and sauté until softened, about 3 to 5 minutes.
  2. Add the garlic, ground cumin, chili powder, smoked paprika, and dried oregano; cook until the garlic is golden and aromatic.
  3. Add the pinto beans and vegetable broth to the saucepan and stir to combine with the onion and spices. Season with salt and black pepper to taste and add a dash of hot sauce.
  4. Lower the heat, cover, and simmer for about 10 minutes, stirring occasionally.
  5. Remove from the heat and garnish with chopped cilantro.

Notes

Use drained and rinsed canned pinto beans as listed; for a thicker texture, mash a few beans against the pan while simmering. Adjust salt and hot sauce to taste. Refrigerate leftovers and reheat gently on the stove or in the microwave.
